Terroir

There is much archaeological evidence of ancient vineyards in the Mount Hebron region, providing evidence of the centrality of this area in the Holy Land’s wine industry. At the dig which took place at Tel Hebron, pottery shards from wine amphorae have been unearthed, stamped with the royal seal of the Kingdom of Judah (700 BCE) on which “For the King of Hebron” can be clearly seen. In biblical Susya and the Yatir Forest, 2,000-year-old wineries are a tangible reminder of the widespread wine industry that existed here. At an elevation of 900 meters, where the Judean Desert melds with the high mountains, home to harsh, snowy winters and intensely dry, hot desert summers, the deep “wadis” (valleys) form classic “terroir” and are perfect for the production of red gourmet wines. The vineyards are cultivated adjacent to cherry orchards, and aficionados have suggested that one can taste their delicate aroma in the wine.

Climate

As a consequence of the unique climate of the Judean Desert, the vineyards enjoy extreme summer heat and freezing cold winter weather, the combination of which imparts the grapes with complex flavors that greatly influence the wine produced.

In addition to extreme seasonal variances, the temperature levels between night and day can also differ by up to 20°C.

Grapes

Quality varietals of Cabernet Sauvignon, Petit Verdot, Shiraz and Pinot Noir are grown on a specialist trellis system with particular attention given to cultivation, lighting, air circulation and creating optimal vine growing conditions. Only bio-friendly materials are used in cultivating the grapes in order to protect the natural biological environment of the vineyard.

The Vineyard

Professional winegrowers are known to chew the grape seed in order to determine when the grapes should be harvested and the potential quality of the wine produced from them. The quality is reliant on the grape seed and the vine’s roots, and it follows that wines from La Forêt Blanche Vineyards draw their unique flavor from the ancient roots of the vineyards that grew in the Holy Land and were recognized throughout the known world as the most excellent of all wines.

In 1993, Menachem Livni, pioneered the planting of Cabernet Sauvignon grapes in the Hebron Hill area and established the Sde Kalev vineyards.

Bruno Darmon, Chief winemaker joins the winery

Bruno Darmon joined the winery in 2009 as chief-winemaker in order to bring out the best of the grapes of Sde Kalev With over 20 years of international experience in winemaking, the fine wines he has crafted have received numerous awards in both national and international competitions.

Yaacov Bris joins La Foret Blanche winery

Yaacov Bris has joined the winery already in 2016, expert in digital marketing and E-commerce, he leads the marketing strategy of the company. From ther on the entire strategy changes, and they begin to implement a different and new marketing strategy that will develop and enhance the wine culture of Israel.<br /> the creation of an e-commerce wine website that sells wine without middleman markup, directly to consumers.

La Forêt Blanche Crowdfunding Campaign a Success!

At the end of March 2020, we successfully completed our fundraising campaign, raising almost 150,000 shekels for the winery. The money raised is being invested in developing our online shopping website (where you are visiting now), as well as our “brick and mortar” visitor center which will open in the near future.

La Forêt Blanche Winery History

In 2003, the Livni family began producing wine from their single varietal vineyard at Sde Kalev.

The flagship wine “Yaar Levanon” – Free-run Cabernet 2016

The flagship wine “Yaar Levanon” – Free-run Cabernet 2016 was created entirely from single vineyard of Cabernet Sauvignon grapes, sourced solely from old vines of the Sde Kalev Vineyard. The vineyard is located between the high central mountains and the Judean desert at an altitude of 900 meters. The grapes are selectively harvested entirely by hand, and the juice is allowed to run naturally and freely, without pressing. The wine was aged for 24 months in French and American oak barrels and bottled without filtration. 

The winery’s flagship wine precisely expresses the winemaker’s philosophy and the exceptional terroir of the Sde Kalev vineyard. It has a deep, mellow, almost black bordeaux color, bursting with the rich, intense aroma of black forest berries and dark Belgian chocolate, alongside fresh green peppercorns, rosemary, violets and lavender blossoms. 

Each sip delivers a gentle caress that slowly reveals additional strata hidden in the wine.
